Baked Salmon Cups

Ingredients

  • 3 full-sheet ONE ORGANIC nori 
  • 1 cup steamed rice (room temperature)
  • 1 lb salmon filet cubed
  • 3 tbsp teriyaki sauce
  • A pinch of salt
  • 1 tbsp mayo
  • 1 tbsp rice vinegar
  • Cut green onions (optional)
  • Furikake seasoning (optional)

Directions

  1. Cut nori sheets with kitchen sheers into quarters and set aside.
  2. Mix cubed salmon with teriyaki sauce and mayo.
  3. Add rice vinegar and salt to rice and mix well.
  4. Place a small bite-sized scoop of rice onto the nori square and press down with a wet spoon into the muffin tin. Repeat to fill the tray.
  5. Bake in a preheated 350 oven for 10-12 minutes until salmon is just cooked.
  6. Plate and garnish with furikake seasoning and green onions.
