Nori Sushi Sandwich

  Prep Time: 20-30 mins (varies with filling)        1 Full Sheet Makes 1 Sandwich


Ingredients

  • 1 full-sheet ONE ORGANIC nori 
  • 1 cup steamed rice (room temperature)
  • 1/2 avocado sliced
  • Plastic wrap


Spam Egg Filling

  • 2 eggs
  • 2 slices Spam
  • Teriyaki sauce


Salmon Filling

  • 2 pieces salmon sashimi
  • 4 cucumber slices

Directions

  1. Brown Spam in a frying pan and set aside.
  2. Whisk the eggs in a bowl and cook in a frying pan on low heat in a thin layer.
  3. Cover a cutting board with a large sheet of plastic wrap and place a sheet of nori on top. 
  4. Make a cut from the center of the nori sheet to the middle of one of the sides.
  5. On the bottom left quarter of the nori sheet, carefully spread a layer of rice. 
  6. On the top left nori quarter, place the 2 slices of Spam and drizzle with teriyaki sauce.
  7. Layer the cooked egg on the top right nori quarter. 
  8. Lastly arrange the avocado slices on the remaining quarter of nori.
  9. Fold the quarter with the rice onto the Spam. Then fold the two quarters to the right, onto the egg.
  10. Lastly, fold the entire sandwich down onto the bottom right quarter with the avocado.  
  11. Tightly wrap the plastic around the sushi sandwich to maintain its shape.
  12. Cut the sushi sandwich in half.

    *Note:  Use the same process for the salmon filling.
