Matcha Latte Cookies

Matcha Cookie

  • 1 1/2 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tbsp ONE ORGANIC Matcha
  • 1/2 tsp salt
  • 1/2 cup unsalted butter
  • 1/2 cup sugar
  • 1/4 cup brown sugar
  • 1 egg
  • 1 tsp vanilla

Mascarpone Cream

  • 3/4 cup mascarpone cheese
  • 1/2 cup whipping cream
  • 1/4 cup and 1 tbsp powdered sugar
  • 1 teaspoon vanilla extract

Directions

  1. Preheat the oven to 350ºF.
  2. Sift together flour, baking powder, baking soda, matcha powder, and salt.
  3. In a stand mixer, add softened butter and beat until creamy.
  4. Add brown sugar and granulated sugar to the mixture and mix well.
  5. Add vanilla extract and an egg and continue mixing.
  6. Next, add in the flour mixture to the butter mixture and mix until just combined. The dough should be firm but easy to scoop.
  7. Scoop the dough onto a lined cookie sheet and leave a 1-2″ gap for the cookies to spread.
  8. Using two fingers, slightly flatten the top of each cookie ball.
  9. Bake the cookies for 11-12 minutes and cool.
  10. Beat mascarpone cream until it’s creamy.
  11. Add whipping cream, powdered sugar and vanilla extract and beat until the mixture is thick and smooth.
  12. Once cookies are cooled, fill a piping bag with mascarpone cream and use a round tip to pipe swirls on each cookie.
