Matcha Cookie
- 1 1/2 cup all-purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp ONE ORGANIC Matcha
- 1/2 tsp salt
- 1/2 cup unsalted butter
- 1/2 cup sugar
- 1/4 cup brown sugar
- 1 egg
- 1 tsp vanilla
Mascarpone Cream
- 3/4 cup mascarpone cheese
- 1/2 cup whipping cream
- 1/4 cup and 1 tbsp powdered sugar
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 350ºF.
- Sift together flour, baking powder, baking soda, matcha powder, and salt.
- In a stand mixer, add softened butter and beat until creamy.
- Add brown sugar and granulated sugar to the mixture and mix well.
- Add vanilla extract and an egg and continue mixing.
- Next, add in the flour mixture to the butter mixture and mix until just combined. The dough should be firm but easy to scoop.
- Scoop the dough onto a lined cookie sheet and leave a 1-2″ gap for the cookies to spread.
- Using two fingers, slightly flatten the top of each cookie ball.
- Bake the cookies for 11-12 minutes and cool.
- Beat mascarpone cream until it’s creamy.
- Add whipping cream, powdered sugar and vanilla extract and beat until the mixture is thick and smooth.
- Once cookies are cooled, fill a piping bag with mascarpone cream and use a round tip to pipe swirls on each cookie.
